Frequently asked questions
About our wines, the vineyards, where to buy and how to visit us.
The wines
Which wines do you make?
We make four wines, all Vinho Regional Algarve, in 75 cl bottles: Al-Mudd Pét-Nat 2024 (rosé, ancestral method), Al-Mudd Sauvignon Blanc 2025 (Burgau), Terraços de Monchique Riesling 2024 and Terraços da Fóia Altitude Tinta Roriz 2021 (2nd edition).
What is a Vinho Regional Algarve?
It is the geographical indication for the wines of the Algarve: a certification of origin and quality, awarded by the Algarve Wine Commission to wines made from grapes grown in the region. It guarantees consumers where the wine comes from and a controlled product, and it values the Algarve. It allows more freedom of grape varieties and style than the Algarve’s designations of origin (Lagos, Portimão, Lagoa and Tavira). All our wines are Vinho Regional Algarve.
What is the difference between Al-Mudd and Terraços da Fóia?
Al-Mudd brings together the wines of the Algarve: the Sauvignon Blanc, from Burgau, by the sea, and the Pét-Nat, from the Monchique mountains. Terraços da Fóia is the Altitude line, from the Monchique mountains, with the Riesling and the Tinta Roriz.
What does “Al-Mudd” mean?
In Arabic, the mudd is an ancient unit used to measure liquids. The name is a tribute to the Arab heritage of the Algarve.
What is a Pét-Nat?
It is a sparkling wine made by the ancestral method: a single fermentation, finished in the bottle, without filtration. Our Al-Mudd Pét-Nat is a brut nature rosé made from Tinta Roriz, 75 cl.
Which grape varieties do you use?
Sauvignon Blanc in the Al-Mudd Sauvignon Blanc, Riesling in the Terraços de Monchique, and Tinta Roriz in the rosé Pét-Nat and the Terraços da Fóia Altitude.
What is the alcohol content of each wine?
Al-Mudd Pét-Nat, 11% vol.; Al-Mudd Sauvignon Blanc, 13.5% vol.; Terraços de Monchique Riesling, 11.5% vol.; Terraços da Fóia Tinta Roriz, 11.5% vol.
How do you work the vineyards? Are the wines organic?
We practise an agriculture that coexists with nature: the vineyards receive little or no pesticide. We are not certified organic, so we do not use that term.
How should I serve the wines?
According to the wine shops’ data sheets: the Pét-Nat at 5 to 10 °C, the Sauvignon Blanc at 7 to 14 °C and the Tinta Roriz at 12 to 18 °C. The Riesling well chilled.
The Pét-Nat is unfiltered, so a slight sediment at the bottom is normal.
Vineyards and terroir
Where are the vineyards?
In Burgau, by the sea, on the Montinhos property (the Burgau Family Estate), where the Sauvignon Blanc comes from. All the other wines come from the Quinta de São Francisco, in the Monchique mountains, at 695 metres altitude.
Are there high-altitude wines in the Algarve?
Yes. The Quinta de São Francisco is in the Monchique mountains, on north-facing terraces, up to 695 metres, on syenite soils. The Pét-Nat, the Riesling and the Tinta Roriz come from there.
Who is behind Sul Composto?
It is a family project of Carlos Gracias, a horticultural engineer, rooted in the land of Montinhos, in Burgau. The company is based in Portimão. The full story is on the About us page.
